The Only Carrot Cake Recipe You Will Ever Need

Whether you’re going to an Easter get together or hosting one we think you should bake our favorite, carrot cake!  But seriously, even if you aren’t doing anything for Easter, we still think you should indulge in this carrot cake because nothing says spring more than a homemade slice (or entire thing) of carrot cake!



For the Cakes:

2 cups flour

4 eggs

1 tsp. vanilla extract

2 tsp. cinnamon

2 tsp. baking soda

2 cups sugar

3 cups grated carrots

1 ½ cups corn oil

½ tsp. salt

1 tsp. baking powder

Mix all dry ingredients in large bowl; blend (using blender) carrots and oil, a third at a time – in other words blend 1 cup carrots with ½ cup oil at a time.  Usually you have to do that amount gradually in your blender.  Then add eggs and vanilla, beat until smooth.

Combine all ingredients.  Bake in three cake tins that have been greased and floured for 30 minutes at 350 degrees.

For the Frosting:

1 cup chopped walnuts or pecans

1 box confectioner’s sugar

1 8 oz. package cream cheese

1 stick butter or margarine

1 tsp. vanilla

Mix all ingredients together.  Frost each layer.  Refrigerate frosted cake.  It should be well chilled before serving.


This Cake is seriously going to become your friends and family’s favorite thing and don’t be surprised if it’s requested next Easter!
